4 tablespoons all-purpose flour
2 tablespoons cooking oil
A few drops of vanilla extract (optional)

Ingredients for the Syrup:

20ml hot water
1/2 tbsp. granulated sugar
1 tsp. rum (optional)

Decoration:

200ml whipping cream
1 tbsp. granulated sugar
Strawberries

Directions - Sponge Cake:

  1. Put the egg and granulated sugar in a bowl. Beat with an electric mixer until it’s white and fluffy.
  2. Sift the flour and mix with a spatula until combined. Then mix in cooking oil and vanilla extract.
  3. Heat cooking oil in a frying pan. Pour half of the batter, cover, and cook on low for 4~5 minutes. When the surface becomes dry, remove it from the pan, wrap it with plastic wrap, and let it cool completely.
  4. Repeat the process with the other half of the batter.

Directions - Syrup:

  1. Mix hot water and sugar very well.
  2. Add rum if you like.

Directions - Decoration:

  1. Cut the strawberries and save some for the topping.
  2. Combine whipping cream and granulated sugar in a dry clean bowl. Float the bottom of the bowl in ice water, and whisk the cream until it forms a soft peak.
  3. Brush one layer of the sponge cake with syrup and coat the surface with the cream.
  4. Place cut strawberries over the creamed surface. Then coat again with the cream.
  5. Place another layer of sponge cake, and frost the top and sides with the cream.
  6. Pipe out some whipped cream and garnish with some strawberries.
  7. Leave the cake in the fridge for a few hours, up to a day. The cream will set and you can cut the cake easily.

Ingredients:

600g (1.3lb.) warm cooked rice
200g (7oz.) chicken breast without the skin
200g (7oz.) onion
50g (1.8oz.) canned sliced mushrooms
8 eggs
Cooking oil
Ketchup
Salt and pepper
Cooked broccoli (optional)

Directions:

  1. Dice the chicken and chop the onion.
  2. Heat 1 tbsp. of cooking oil in a frying pan and cook the chopped onion until tender.
  3. Add the diced chicken and cook until no longer pink. Then add sliced mushrooms and 8 tbsp. of ketchup.
  4. Add warm cooked rice. When it’s evenly coated with ketchup, season it with salt and pepper, then divide it into four portions. You can wrap the leftover rice with plastic wrap and keep it in the freezer for about a week or more.
  5. Beat 2 eggs (for 1 serving) in a bowl, then season with salt and pepper.
  6. In a clean frying pan, heat 1/2 tbsp. of cooking oil, spread the egg mixture, and make a round omelet. Before the egg is fully cooked, place the seasoned rice in the middle.
  7. Fold both sides of the egg, then shape it using the edge of the pan. Carefully flip it over onto a plate. *You can use a paper towel to shape it nicely.
  8. Put some ketchup on top (that’s the moment to write a message!), and serve with cooked broccoli if you'd like.
